About Pop’s

Pop’s Patties was launched in 2023 by Chef Shirwin Burrowes. Burrowes’ formative years were spent in Barbados, where his passion for Caribbean food was born. After moving to the Bronx at age 10, he began to explore the extensive culinary landscape New York has to offer. After working his way through some of the most prestigious kitchens in NYC, he launched Pop’s Patties; Caribbean style patties with traditional Bajan flavor profiles (scotch bonnet, curry, thyme). Pop’s Patties is a celebration of Burrowes’ Caribbean roots through a distinctly New York point of view. Building upon the legacy of Caribbean patties in the NYC food landscape; Pop’s aims to have patties available on every block the way a hot dog, or a classic slice is. Cementing it’s place in the canon of iconic New York foods.
